Ingredients

The Salad

  • 2 cans (15 oz) garbanzo beans
  • 3 stalks celery
  • ¼ large white onion
  • cup dill pickles
  • 1 teaspoon fresh dill

The Sauce

  • 1 cup full-fat Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon pickle juice
  • 1 tablespoon yellow mustard
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon paprika

Instructions

  1. Remove the casings from the garbanzo beans by rubbing them with a towel.
  2. Mash the majority of the garbanzo beans, leaving some whole.
  3. Finely dice the celery, white onion, and pickles, then add them to the garbanzo beans.
  4. In a separate bowl, mix the Greek yogurt, mayonnaise, lemon juice, pickle juice, mustard, garlic powder, salt, and pepper.
  5. Combine the sauce with the garbanzo bean mixture and mix well.
  6. Sprinkle with paprika and fresh dill before serving.
