Ingredients

The salad

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 cups chopped English cucumber
  • 1 ¼ cups chopped Roma tomatoes
  • ¼ cup chopped red onion
  • 3 Tbsp chopped fresh parsley

The dressing

  • ¼ cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 ½ tsp minced garlic
  • 1 tsp Italian seasoning
  • to taste salt and pepper

Instructions

  1. Combine chickpeas, cucumber, tomatoes, red onion, and parsley in a bowl.
  2. In a separate measuring cup, mix olive oil, lemon juice, garlic, Italian seasoning, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss to coat evenly. Adjust seasoning if needed.
  4. Serve immediately or within an hour for best results.
