Chickpea Salad

Ingredients

  • 2 cans (14 ounce) chickpeas, rinsed and drained
  • ½ cup roasted red and/or yellow peppers, chopped
  • ¼ cup sliced kalamata olives
  • cup sliced cherry tomatoes
  • 1 bunch parsley, chopped
  • 3 pieces scallions, chopped
  • 2 cloves garlic, pressed or minced
  • 1 piece lemon, juiced
  • to taste olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Combine all the ingredients in a large bowl.
  2. Season with salt and pepper.
  3. Drizzle with olive oil and squeeze lemon juice over the salad.
  4. Mix everything together until well combined.
