Chickpea Salad

The salad

chickpeas, drained and rinsed

cucumber, peeled, quartered lengthwise and diced

grape tomatoes, halved

red onion, thinly sliced

pitted Kalamata olives, halved

feta cheese, cut into cubes

minced fresh parsley or other fresh herbs
Instructions
- Whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, and salt and pepper to taste in a small bowl to make the dressing.
- In a large bowl, combine the chickpeas, cucumbers, grape tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
- Drizzle the dressing over the salad and toss to combine.
