Chickpea Salad

Ingredients

The dressing

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • to taste salt and freshly ground black pepper

The salad

  • 1 can (15.5 ounce) chickpeas, drained and rinsed
  • 2 cups cucumber, peeled, quartered lengthwise and diced
  • cups grape tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ½ cup pitted Kalamata olives, halved
  • 4 ounces feta cheese, cut into cubes
  • ½ cup minced fresh parsley or other fresh herbs

Instructions

  1. Whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, and salt and pepper to taste in a small bowl to make the dressing.
  2. In a large bowl, combine the chickpeas, cucumbers, grape tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
  3. Drizzle the dressing over the salad and toss to combine.
