Ingredients

The salad

  • cups chickpeas, drained and rinsed
  • 2 cups cucumber, chopped in ½ inch chunks
  • cups cherry tomatoes, sliced in half
  • ¼ cup red onion, diced
  • ½ cup parsley, chopped
  • ¼ cup fresh mint, chopped
  • 1 whole avocado

The dressing

  • ¼ cup lemon juice
  • ¼ cup olive oil
  • ¾ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. In a bowl, combine chickpeas, cucumber, tomatoes, red onion, parsley, and mint.
  2. Cut the avocado into chunks and add it to the bowl.
  3. Pour lemon juice and olive oil over the salad.
  4. Add salt and pepper, then mix everything together and serve.
