Ingredients

  • 2 cloves garlic
  • 8 oz. mushrooms
  • 2 Tbsp olive oil
  • 1 cup brown lentils
  • ½ tsp dried thyme
  • ¾ tsp rubbed sage
  • 2 cups vegetable broth
  • 1 13.5 oz. can coconut milk
  • salt to taste
  • freshly cracked black pepper to taste

Instructions

  1. Mince the garlic and slice the mushrooms.
  2. Sauté the garlic in olive oil for about one minute, then add the mushrooms and cook until they brown.
  3. Add the lentils, thyme, sage, pepper, and vegetable broth to the skillet and stir to combine.
  4. Cover the skillet, bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  5. After 20 minutes, add the coconut milk and stir, then simmer for about five more minutes until thickened.
  6. Taste and adjust salt as needed before serving.
