Lentils with Creamy Mushroom Gravy

Instructions
- Mince the garlic and slice the mushrooms.
- Sauté the garlic in olive oil for about one minute, then add the mushrooms and cook until they brown.
- Add the lentils, thyme, sage, pepper, and vegetable broth to the skillet and stir to combine.
- Cover the skillet, bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
- After 20 minutes, add the coconut milk and stir, then simmer for about five more minutes until thickened.
- Taste and adjust salt as needed before serving.
