Mushroom Gravy

Instructions
- Finely slice the cremini mushrooms.
- Heat olive oil in a medium-sized pot over medium-high heat.
- Cook mushrooms until soft and most of the water evaporates.
- Finely chop the fresh rosemary, thyme, and sage.
- Reduce heat to medium and add the fresh herbs and spices to the mushrooms.
- Cook until the mushrooms are golden brown.
- Add vegetable stock to the mushrooms and cook for 5 minutes.
- Combine heavy cream or plant-based milk with all-purpose flour in a bowl and whisk until smooth.
- Add the flour mixture to the stock and mushrooms, stirring as it thickens.
- Remove from heat once bubbling and thickened.
- Serve immediately or keep warm until ready to serve.
