Mushroom Gravy

Instructions
- Melt the butter (or alternative) in a large skillet over medium heat.
- Add the onion and mushrooms, sautéing until the onion is translucent and mushrooms are browned.
- Stir in the garlic and cook for 30 seconds.
- Sprinkle the flour over the mixture and stir for 1 minute.
- Slowly whisk in the vegetable stock until smooth.
- Add the brandy, sage, bay leaves, soy sauce, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes, stirring frequently.
