Mushroom Gravy

Ingredients

The base

  • 6 tablespoons unsalted butter or non-dairy butter spread or olive oil
  • 1 large yellow onion, finely chopped
  • 8 ounces baby bella mushrooms, very finely chopped
  • 8 ounces baby bella mushrooms, thinly sliced (optional)
  • 4 cloves garlic, minced
  • 6 tablespoons all-purpose flour
  • 4 cups vegetable stock
  • 2 tablespoons brandy (optional)

The seasonings

  • 10 large fresh sage leaves
  • 2 leaves bay leaves
  • 2 teaspoons low sodium soy sauce or tamari
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Melt the butter (or alternative) in a large skillet over medium heat.
  2. Add the onion and mushrooms, sautéing until the onion is translucent and mushrooms are browned.
  3. Stir in the garlic and cook for 30 seconds.
  4. Sprinkle the flour over the mixture and stir for 1 minute.
  5. Slowly whisk in the vegetable stock until smooth.
  6. Add the brandy, sage, bay leaves, soy sauce, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring frequently.
