Mushroom Gravy

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 cup shallot, finely chopped
  • 16 ounces cremini mushrooms, sliced
  • ½ tablespoon tamari
  • 2 cloves garlic, minced
  • tablespoons fresh thyme leaves
  • ½ tablespoon chopped fresh rosemary
  • ¼ cup all-purpose flour
  • 3 cups vegetable broth
  • to taste sea salt
  • to taste fresh black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shallot and cook until soft, about 4 minutes.
  3. Add mushrooms and cook until soft, about 8 to 10 minutes.
  4. Stir in tamari, garlic, thyme, and rosemary.
  5. Sprinkle flour over the mixture and stir for 1 minute.
  6. Add vegetable broth and simmer until thickened, whisking often, about 20 minutes.
  7. Season with salt and pepper to taste.
