Mushroom Gravy

Instructions
- Heat olive oil in a large skillet over medium heat and sauté the onion until it softens.
- Add garlic and mushrooms, stirring until fragrant.
- Add potato, tamari, and water, then bring to a boil.
- Lower heat to a simmer, cover the pan, and cook until potatoes are fork-tender.
- Transfer the mixture to a blender, add salt and pepper, and blend until smooth.
- Adjust seasoning to taste and serve warm.
