Mushroom Gravy

Instructions
- Warm the broth and water in a small pot, then stir in miso until dissolved.
- In a large skillet, heat butter or olive oil and sauté mushrooms and shallot over medium-high heat for about 7-8 minutes.
- Lower the heat to medium, add garlic and thyme, and sauté for 2 minutes.
- Sprinkle flour over the mixture and stir to combine, cooking for 2 minutes.
- Add half of the hot broth, whisking and scraping the browned bits from the pan, then add the remaining broth.
- Simmer gently on medium-low until the gravy is reduced and thickened, about 5 minutes.
- Taste and adjust seasoning with salt and pepper as needed.
