Mushroom Gravy

Ingredients

The base

  • 2 cups mushroom broth or vegetable broth
  • 1 cup water
  • 1 tablespoon miso paste

The main ingredients

  • 3 tablespoons butter or olive oil
  • 12 ounces mushrooms, sliced
  • 1 unit shallot, finely diced
  • 2 cloves garlic, finely chopped
  • 1 tablespoon fresh thyme leaves

The thickening agent

  • 3 tablespoons all-purpose flour or gluten-free flour

Seasoning

  • to taste unit salt
  • to taste unit black pepper

Instructions

  1. Warm the broth and water in a small pot, then stir in miso until dissolved.
  2. In a large skillet, heat butter or olive oil and sauté mushrooms and shallot over medium-high heat for about 7-8 minutes.
  3. Lower the heat to medium, add garlic and thyme, and sauté for 2 minutes.
  4. Sprinkle flour over the mixture and stir to combine, cooking for 2 minutes.
  5. Add half of the hot broth, whisking and scraping the browned bits from the pan, then add the remaining broth.
  6. Simmer gently on medium-low until the gravy is reduced and thickened, about 5 minutes.
  7. Taste and adjust seasoning with salt and pepper as needed.
