Mushroom Gravy

Instructions
- Heat the butter in a saucepan over medium heat until foaming.
- Add the mushrooms and season with salt, cooking until the liquid evaporates, about 20 minutes.
- Stir in the flour and cook for about 5 minutes.
- Add about 1 cup of the stock, stirring until incorporated, then add the remaining stock and mix thoroughly.
- Season with cracked black pepper and reduce the heat to medium-low.
- Simmer until thickened, about 30 minutes, stirring often.
- Stir in fresh thyme leaves to taste, if using, and serve.
