Mushroom Gravy

Ingredients

  • ¼ cup butter
  • 16 ounces mushrooms, sliced
  • to taste sea salt
  • to taste freshly cracked black pepper
  • ¼ cup all-purpose flour
  • 2 cups beef stock or vegetable stock
  • to taste fresh thyme, optional

Instructions

  1. Heat the butter in a saucepan over medium heat until foaming.
  2. Add the mushrooms and season with salt, cooking until the liquid evaporates, about 20 minutes.
  3. Stir in the flour and cook for about 5 minutes.
  4. Add about 1 cup of the stock, stirring until incorporated, then add the remaining stock and mix thoroughly.
  5. Season with cracked black pepper and reduce the heat to medium-low.
  6. Simmer until thickened, about 30 minutes, stirring often.
  7. Stir in fresh thyme leaves to taste, if using, and serve.
