Ingredients

The gravy base

  • 3 Tbsp butter or cooking oil
  • 2 cloves garlic
  • 8 oz mushrooms
  • 3 Tbsp all-purpose flour
  • 2 cups vegetable broth

The seasoning

  • 3 sprigs fresh thyme
  • 1 tsp dried sage
  • to taste salt and pepper

Instructions

  1. Rinse and slice the mushrooms, then mince the garlic.
  2. Melt the butter in a skillet over medium heat and sauté the garlic until fragrant.
  3. Add the sliced mushrooms and sauté until they release their moisture and become dark.
  4. Lower the heat and add the flour, stirring until it forms a paste and begins to brown slightly.
  5. Slowly whisk in the vegetable broth until the flour is fully dissolved.
  6. Add thyme, sage, and pepper, then stir to combine.
  7. Bring the mixture to a simmer and let it cook for 7-10 minutes until thickened.
  8. Taste and adjust seasoning with salt and pepper as needed.
