Cheesy Baked Tortellini

Ingredients

The sauce

  • 4-5 cloves garlic
  • 6-8 ounces grape or cherry tomatoes
  • 1-2 tablespoons extra-virgin olive oil
  • to taste salt and pepper
  • 28 ounces crushed tomatoes
  • 1 teaspoon sugar
  • 2 teaspoons Italian seasoning
  • a pinch red pepper flakes
  • a pinch baking soda

The main dish

  • 20 ounces refrigerated tortellini
  • 8 ounces mozzarella cheese
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Boil a large pot of salted water.
  2. In a skillet, heat olive oil and add halved tomatoes and minced garlic, cooking until tomatoes begin to burst.
  3. Add remaining sauce ingredients, bring to a simmer, then cover and reduce heat.
  4. Preheat the oven to 400°F.
  5. Cook the tortellini in boiling water according to package directions.
  6. Drain the tortellini and combine with the sauce in the skillet.
  7. Top with shredded mozzarella and Parmesan cheese.
  8. Bake in the oven for 4-5 minutes until the cheese is melted and bubbly.
  9. Serve immediately.
