Baked Tortellini in Meat Sauce

Instructions
- Preheat the oven to 400°F and coat a baking dish with cooking spray.
- Bring a pot of water to a boil and cook the tortellini according to package directions.
- In a large pan, heat olive oil over medium-high heat and sauté the diced onion until softened.
- Add ground beef to the pan, season with salt and pepper, and cook until browned.
- Stir in the marinara sauce and heat through.
- Drain the cooked tortellini and combine it with the meat sauce in the pot, tossing to coat.
- Transfer the mixture to the prepared baking dish and sprinkle shredded mozzarella on top.
- Bake for 20 minutes or until the cheese is melted and starting to brown.
- Sprinkle with chopped parsley before serving.
