Instructions
- Preheat the oven to 350°F.
- In a bowl, whisk together the eggs, egg whites, cottage cheese, salt, and pepper.
- In a skillet, heat the avocado oil over medium-high heat.
- Add the diced red pepper, onion, broccoli, and turkey bacon, cooking for about 5-7 minutes until the veggies soften.
- Stir in the minced garlic and cook for an additional minute, then turn off the heat and let it cool slightly.
- Combine the veggie mixture with the egg mixture and stir in the shredded cheddar cheese.
- Spray the skillet with nonstick spray and pour the egg mixture back into it.
- Bake for 30-35 minutes until firm, then let cool for five minutes before serving.
