High Protein Veggie Frittata

Ingredients

The base

  • 4 eggs eggs
  • 1 cup egg whites
  • ½ cup cottage cheese
  • 1 tsp salt
  • ½ tsp pepper

The vegetables and protein

  • 1 tbsp avocado oil
  • 1 small red bell pepper, diced
  • ½ yellow onion yellow onion, diced
  • 1 cup broccoli, roughly chopped
  • 3 strips turkey bacon, diced
  • 2 cloves garlic, minced

The cheese

  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, whisk together the eggs, egg whites, cottage cheese, salt, and pepper.
  3. In a skillet, heat the avocado oil over medium-high heat.
  4. Add the diced red pepper, onion, broccoli, and turkey bacon, cooking for about 5-7 minutes until the veggies soften.
  5. Stir in the minced garlic and cook for an additional minute, then turn off the heat and let it cool slightly.
  6. Combine the veggie mixture with the egg mixture and stir in the shredded cheddar cheese.
  7. Spray the skillet with nonstick spray and pour the egg mixture back into it.
  8. Bake for 30-35 minutes until firm, then let cool for five minutes before serving.
