Instructions
- Preheat the oven to 350ºF and grease a 9-inch pie dish.
- In a blender or large bowl, combine the pumpkin puree, coconut milk, maple syrup, pumpkin pie spice, eggs, cornstarch, and salt. Mix until smooth.
- Pour the mixture into the greased pie pan and smooth the top.
- Bake for 1 hour, or until the center is set and doesn't jiggle.
- Let the pie cool for 1 hour at room temperature, then chill in the fridge for at least 4 hours before serving.
