Ingredients

The squash

  • 1 large spaghetti squash

The garlic and parsley mixture

  • 3 tablespoons butter
  • 2 cloves garlic
  • 2-3 tablespoons minced parsley

The seasoning

  • ½ cup grated Parmesan cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. In a small bowl, combine minced garlic, minced parsley, and softened butter.
  4. Rub the garlic-parsley butter over the cut sides of the squash and inside the cavity.
  5. Bake the squash for 40-60 minutes until the flesh can be easily scraped into strands.
  6. Allow the squash to cool slightly, then scrape the strands into a bowl.
  7. Season with salt and pepper, then mix in the grated Parmesan cheese.
