Spaghetti Squash with Garlic and Herbs

Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- Cut the spaghetti squash in half lengthwise and remove the seeds and stringy insides.
- Place the squash cut-side down on the baking sheet and bake for 30-40 minutes until tender.
- Once baked, let the squash cool slightly, then use a fork to scrape the strands into a bowl.
- In a small saucepan, heat the olive oil until shimmering, then add minced garlic and cook briefly.
- Combine the spaghetti squash with the garlic oil, fresh herbs, and toasted pine nuts, then season with salt and pepper.
- Serve topped with grated parmesan cheese if desired.
