Spaghetti Squash with Garlic and Herbs

Ingredients

The squash

  • 1 medium spaghetti squash

The dressing

  • 1 ½ Tbsp. olive oil
  • 2 cloves garlic
  • 3 Tbsp. chopped fresh herbs
  • 3 Tbsp. pine nuts
  • to taste sea salt
  • to taste black pepper
  • optional freshly grated parmesan cheese

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise and remove the seeds and stringy insides.
  3. Place the squash cut-side down on the baking sheet and bake for 30-40 minutes until tender.
  4. Once baked, let the squash cool slightly, then use a fork to scrape the strands into a bowl.
  5. In a small saucepan, heat the olive oil until shimmering, then add minced garlic and cook briefly.
  6. Combine the spaghetti squash with the garlic oil, fresh herbs, and toasted pine nuts, then season with salt and pepper.
  7. Serve topped with grated parmesan cheese if desired.
