Instructions
- 1. Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
- 2. Poke several slits around the squash with a knife to prevent it from exploding.
- 3. Microwave the squash for 5 to 6 minutes to soften it for easier cutting.
- 4. Allow the squash to cool slightly, then cut off the stem and slice it in half.
- 5. Remove the seeds and rub the cut sides with olive oil, seasoning with salt and pepper.
- 6. Place the squash halves cut-side down on the baking sheet and roast for 40 to 60 minutes until tender.
- 7. Cool slightly and use a fork to fluff and remove the strands from the squash.
