Ingredients

The squash

  • 2 medium spaghetti squash

The seasoning

  • 2 tablespoons olive oil
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. 1. Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  2. 2. Poke several slits around the squash with a knife to prevent it from exploding.
  3. 3. Microwave the squash for 5 to 6 minutes to soften it for easier cutting.
  4. 4. Allow the squash to cool slightly, then cut off the stem and slice it in half.
  5. 5. Remove the seeds and rub the cut sides with olive oil, seasoning with salt and pepper.
  6. 6. Place the squash halves cut-side down on the baking sheet and roast for 40 to 60 minutes until tender.
  7. 7. Cool slightly and use a fork to fluff and remove the strands from the squash.
