Instructions

  1. Preheat the oven to 400°F and line a baking sheet with Silpat or parchment paper.
  2. Wash the outer shell of the squash and cut it in half lengthwise.
  3. Scoop out the seeds using a large spoon.
  4. Place the squash halves cut-side-down on the lined baking sheet.
  5. Roast in the oven for 30-45 minutes, depending on the size of the squash.
  6. Check if the skin can be easily pierced with a fork.
  7. Using a fork, scrape the flesh to reveal the noodle-like strands and serve immediately.
