Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the spaghetti squash in half crosswise using a sharp knife.
- Scoop out the seeds from the squash and discard them.
- Drizzle olive oil, salt, and pepper on the cut sides of the squash if desired.
- Place the squash cut side down on the baking sheet and roast for 25-35 minutes.
- Remove the squash from the oven and let it cool for about 10 minutes.
- Using a fork, scrape the flesh from the shell to create long, spaghetti-like strands.
