Vegan Healthy Pasta Salad

Ingredients

The salad

  • 8 oz pasta shells of choice (gluten-free if necessary)
  • ¾ cup shredded carrots
  • 1 red bell pepper, chopped
  • 1 small to medium cucumber, de-seeded and chopped
  • 1 large tomato, chopped
  • cup chopped green onions
  • cup kalamata olives, chopped

The dressing

  • 2 ½ tbsp extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 3 tbsp chopped basil
  • ½ tsp minced garlic
  • ½ tsp sugar
  • 1 tsp salt (or to taste)
  • ½ tsp oregano
  • freshly ground black pepper

Instructions

  1. Cook the pasta according to package directions.
  2. Whisk or blend together the dressing ingredients.
  3. Drain the pasta, rinse it with cold water, and transfer it to a large bowl.
  4. Add the rest of the salad ingredients along with the dressing, and toss to combine.
  5. Season to taste with salt and pepper.
