Vegan Healthy Pasta Salad
Ingredients
The salad

pasta shells of choice (gluten-free if necessary)

shredded carrots

red bell pepper, chopped

cucumber, de-seeded and chopped

chopped green onions

kalamata olives, chopped
The dressing

extra virgin olive oil

red wine vinegar

chopped basil

minced garlic

salt (or to taste)

Instructions
- Cook the pasta according to package directions.
- Whisk or blend together the dressing ingredients.
- Drain the pasta, rinse it with cold water, and transfer it to a large bowl.
- Add the rest of the salad ingredients along with the dressing, and toss to combine.
- Season to taste with salt and pepper.
