Ingredients

The crust

  • 1 cup raw walnuts
  • ½ cup raw unsweetened coconut flakes
  • cups pitted packed dates
  • ½ cup cacao powder or unsweetened cocoa powder
  • a pinch flaky sea salt

The mousse

  • 1 cup heavy cream
  • cups plain whole milk greek yogurt
  • ½ cup cacao powder or unsweetened cocoa powder
  • 1-2 tablespoons honey
  • 2 teaspoons vanilla

The ganache

  • ¾ cup full-fat canned coconut milk or heavy cream
  • 5 ounces dark chocolate, chopped
  • to taste chopped pistachios for topping (optional)

Instructions

  1. Prepare the crust by blending walnuts, coconut, dates, cacao powder, and salt in a food processor until finely ground and forming a ball.
  2. Press the mixture into the bottom of an 8-9 inch springform pan.
  3. For the mousse, whip the heavy cream until stiff peaks form.
  4. Gently fold the Greek yogurt into the whipped cream, then mix in cacao powder, honey, and vanilla until creamy.
  5. Spread the mousse over the brownie layer in the springform pan and refrigerate for 1½ hours.
  6. Melt coconut milk and dark chocolate in a microwave, stirring until smooth, then let cool slightly.
  7. Pour the ganache over the mousse and sprinkle with pistachios if desired, then chill for another 30 minutes.
  8. Release the cake from the springform pan, slice, and serve.
