Ingredients

  • 1 jar roasted red peppers, chopped
  • 12-16 ounces grated pepper jack cheese
  • 8 ounces cream cheese
  • ¾ cup mayonnaise
  • 2 tablespoons minced onion
  • 3 cloves minced garlic
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 350°F.
  2. Remove roasted red peppers from the jar, blot excess water, and chop them.
  3. In a bowl, soften the cream cheese in the microwave for easier stirring.
  4. Add mayonnaise, onion, garlic, and Dijon mustard to the cream cheese and stir to combine.
  5. Mix in the grated cheese and diced peppers until well combined.
  6. Transfer the mixture to an 8x8 dish or pie plate.
  7. You can refrigerate it if cooking later, even a couple of days ahead.
  8. Bake in the oven for 30-45 minutes until bubbly and golden brown on top.
  9. Serve immediately with tortilla chips, pita chips, crackers, or baguette slices.
