Ingredients

The masa

  • 1 pound fresh ground corn masa
  • 1 ¾ cups dried masa harina
  • 1 cup hot tap water
  • ¾ teaspoon salt

The filling and toppings

  • ¾ cup seasoned cooked black beans
  • 8 ounces Mexican chorizo sausage
  • 1 ½ cups salsa
  • cup grated Mexican queso añejo
  • 3 pieces radishes
  • ½ cup vegetable oil

Instructions

  1. Mix masa harina, salt, and hot water in a bowl and let it rest.
  2. Process black beans until smooth, adding water if necessary.
  3. Cook chorizo in a skillet over medium heat until thoroughly cooked.
  4. Prepare a griddle or skillet over medium heat and adjust masa consistency if needed.
  5. Divide masa into 8 portions and form huaraches, filling them with beans.
  6. Press huaraches into 6-inch ovals and cook on the griddle until lightly browned.
  7. Coat the griddle with oil and cook huaraches until crisp, flipping halfway.
  8. Top each huarache with salsa, chorizo, and cheese, then serve with radishes.
