Instructions
- Line a rimmed baking sheet with parchment paper.
- In a large bowl, add the Rice Chex cereal and set aside.
- In a medium microwave-safe bowl, combine the chocolate chips, peanut butter, butter, and salt.
- Microwave the mixture for 30 seconds, then stir and continue microwaving in 15-second intervals until almost melted.
- Stir in the vanilla extract.
- Pour the melted chocolate mixture over the cereal and toss until evenly coated.
- Add the powdered sugar one cup at a time, tossing each time until coated.
- Spread the mixture onto the prepared baking sheet and allow to cool for about 10 minutes.
- Store in an airtight container for up to 1 week.
