Coconut Margarita

Ingredients

The margarita

  • 1 cup coconut milk (from can)
  • ½ cup blanco tequila
  • ¼ cup triple sec
  • ¼ cup lime juice
  • 2–3 tbsp simple syrup or agave

The rim

  • enough honey
  • ¼ cup toasted coconut
  • to taste dried or fresh lime slices

Instructions

  1. Whisk the coconut milk in a measuring glass until smooth.
  2. Fill a shaker halfway with ice.
  3. Add coconut milk, tequila, triple sec, lime juice, and simple syrup to the shaker and shake vigorously for 30 seconds.
  4. Coat the rims of two glasses with honey and dip in toasted coconut.
  5. Add ice to the glasses and pour the margarita mixture evenly into both.
  6. Garnish with dried or fresh lime slices and enjoy.
