Ingredients

The base

  • 1 cup almond flour
  • 1 cup coconut flour (sifted)
  • 1 cup unsweetened shredded coconut
  • ½ cup creamy almond butter or cashew butter
  • cup agave nectar or honey
  • 2 tsp lime juice
  • ¼ tsp sea salt
  • ¼ tsp lemon extract

Flavorings and extras

  • 2 tbsp tequila
  • lime zest to taste
  • optional lime salt for coating
  • 1-2 tsp triple sec (optional)
  • extra coconut for rolling
  • to coat vanilla protein powder or coconut flour

Instructions

  1. Combine almond flour, coconut flour, and shredded coconut in a large bowl.
  2. Add almond butter, lime juice, lime zest, tequila, and remaining ingredients to the bowl.
  3. Mix all ingredients together, preferably using your hands.
  4. Roll the mixture into 1-1.5 inch balls and place them on a tray lined with parchment paper.
  5. Optionally, roll each ball in margarita salt, additional lime zest, and coconut before freezing.
  6. Freeze the bites for 20-30 minutes, then transfer them to a Ziploc bag.
  7. Dust with additional vanilla protein powder or sifted coconut flour for a cakey texture if desired.
  8. Store in the fridge or freezer for up to 6 weeks.
