Ingredients

Salted Crust Layer

  • ¾ cup unsweetened shredded coconut
  • 1 cup raw cashews, toasted
  • 2 tablespoons coconut sugar
  • ½ cup almond meal
  • 1 ½ teaspoons vanilla extract
  • 2 tablespoons coconut oil
  • ¾ teaspoon coarse salt

Creamy Lime Layer

  • 1 ½ cups raw cashews, soaked for 1 hour
  • ¾ cup coconut oil, melted
  • ¾ cup coconut cream
  • ½ cup freshly squeezed lime juice
  • 2 tablespoons freshly squeezed orange juice
  • ½ cup maple syrup or honey
  • 2 tablespoons lime zest
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon tequila (optional)
  • 1 pinch salt

Whipped Coconut Cream

  • 1 tablespoon coconut cream, chilled
  • 1 teaspoon light coconut sugar or honey

Garnish

  • ¼ cup toasted coconut
  • as needed none lime wedges

Instructions

  1. Toast the cashews and coconut in a dry skillet until golden.
  2. Blend all crust ingredients until crumbly and press into a lined baking pan.
  3. Chill the crust while preparing the creamy lime layer.
  4. Blend all creamy lime layer ingredients until smooth and pour over the crust.
  5. Chill for at least 4-5 hours.
  6. Prepare the whipped coconut cream by beating chilled coconut cream and sweetener until stiff peaks form.
  7. Cut the bars into squares and serve topped with coconut cream, toasted coconut, and a lime wedge.
