Instructions
- Toast the cashews and coconut in a dry skillet until golden.
- Blend all crust ingredients until crumbly and press into a lined baking pan.
- Chill the crust while preparing the creamy lime layer.
- Blend all creamy lime layer ingredients until smooth and pour over the crust.
- Chill for at least 4-5 hours.
- Prepare the whipped coconut cream by beating chilled coconut cream and sweetener until stiff peaks form.
- Cut the bars into squares and serve topped with coconut cream, toasted coconut, and a lime wedge.
