Ingredients

The topping

  • ½ cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ cup light brown sugar
  • ½ cup walnuts, finely chopped
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup butter, melted

The filling

  • ¾ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon salt
  • 6 cups chopped rhubarb
  • to taste vanilla ice cream (optional)

Instructions

  1. Prepare the topping by mixing flour, oats, brown sugar, walnuts, cinnamon, and salt in a bowl, then drizzle melted butter over and combine. Refrigerate while preparing the filling.
  2. Preheat the oven to 350°F and prepare a 9x13 baking dish.
  3. In a large bowl, mix sugar, cinnamon, nutmeg, and salt, then add rhubarb and toss to coat.
  4. Pour the rhubarb mixture into the baking dish and sprinkle with the topping.
  5. Bake for 50 to 60 minutes until the juices are bubbling and the topping is golden brown, then cool for 15 minutes before serving.
