Mexican Stuffed Shells

Ingredients

The filling

  • 1 cup mild taco sauce
  • 1 cup mild salsa
  • 2 teaspoons vegetable oil
  • 1 ½ lbs lean ground beef
  • ¾ cup onion, finely diced
  • 1 packet taco seasoning

The pasta and toppings

  • 12 ounces jumbo shell pasta
  • 2 cups shredded cheese
  • 2 tablespoons chopped cilantro
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a 9" x 13" pan with cooking spray.
  2. Combine the taco sauce and salsa in a bowl, then spread it evenly in the bottom of the prepared pan.
  3. Heat vegetable oil in a large pan over medium heat, add onion and cook until translucent.
  4. Add ground beef and taco seasoning to the pan, cooking until the beef is browned.
  5. Stuff the cooked pasta shells with the beef mixture and place them in the pan on top of the salsa.
  6. Sprinkle cheese over the stuffed shells.
  7. Bake uncovered for 20 minutes until the cheese is melted and the sauce is bubbly.
  8. Sprinkle with chopped cilantro and serve.
