Ingredients

The smoothie

  • 2 ¼ cups frozen chopped mango
  • 1 ¼ cups frozen raspberries and/or strawberries
  • 1-2 cups light coconut milk or unsweetened almond milk
  • 1 medium lime, juiced
  • 2 Tbsp fresh ginger
  • 1 Tbsp unsweetened shredded coconut
  • tsp cayenne pepper (optional)
  • 1-2 Tbsp protein powder of choice or hemp seeds (optional)

For serving (optional)

  • Coconut Yogurt or full-fat coconut milk
  • Berries
  • Unsweetened shredded coconut
  • Hemp seeds

Instructions

  1. Add mango, berries, coconut or almond milk, lime juice, ginger, shredded coconut, cayenne pepper, and protein powder to a blender.
  2. Blend on high until creamy and smooth, scraping down the sides as needed.
  3. If the mixture has trouble blending, add more coconut or almond milk.
  4. Serve as is or layer with coconut yogurt or milk, and top with desired toppings.
  5. Enjoy fresh or refrigerate leftovers for up to 3 days, or freeze for up to 1 month.
