Instructions
- Line a cookie sheet with parchment or wax paper.
- In a saucepan, stir together honey, extract, and cinnamon, then bring to a boil and cook for about 5 minutes until it reaches 235°F.
- Add almonds and cook for an additional 5 minutes while stirring.
- Remove almonds with a slotted spoon to drain excess liquid and spread them on the prepared pan. Chill for 15 minutes.
- Place cocoa in a bowl, add the almonds, and toss to coat. Let rest for 30 minutes.
- Combine the coated almonds with raisins, pistachios, and cashews in a bowl and store in an airtight container.
