Ingredients

  • cup honey
  • teaspoons almond or vanilla extract
  • cups roasted salted almonds
  • 1 teaspoon cinnamon
  • ¼ cup cocoa powder
  • 1 cup natural California Raisins
  • ½ cup golden California Raisins
  • 1 cup roasted salted pistachio kernels
  • ½ cup roasted salted cashews

Instructions

  1. Line a cookie sheet with parchment or wax paper.
  2. In a saucepan, stir together honey, extract, and cinnamon, then bring to a boil and cook for about 5 minutes until it reaches 235°F.
  3. Add almonds and cook for an additional 5 minutes while stirring.
  4. Remove almonds with a slotted spoon to drain excess liquid and spread them on the prepared pan. Chill for 15 minutes.
  5. Place cocoa in a bowl, add the almonds, and toss to coat. Let rest for 30 minutes.
  6. Combine the coated almonds with raisins, pistachios, and cashews in a bowl and store in an airtight container.
