Crispy Instant Pot Whole Chicken

Instructions
- Pat the chicken dry and remove any giblets.
- Mix the salt, garlic powder, smoked paprika, black pepper, and cayenne pepper in a bowl.
- Divide the seasoning mixture in half.
- Combine half of the seasoning with the softened butter.
- Loosen the skin from the breast and spread half of the butter mixture under the skin, then spread the remaining butter on top.
- Sprinkle the remaining seasoning mixture on the outside of the chicken.
- Place a trivet in the Instant Pot and pour in the chicken broth.
- Set the chicken breast side up in the Instant Pot.
- Set the Instant Pot to Manual - High Pressure for 25 minutes.
- Allow for a natural pressure release for about 15 minutes.
- Use a crisper lid to air fry for 5 minutes to brown the skin, or broil in the oven until golden brown.
- Let the chicken rest for 10 minutes before serving.
