Crispy Instant Pot Whole Chicken

Ingredients

The chicken

  • 1 whole chicken 3 to 4 pound whole chicken

The seasoning

  • 1 tablespoon sea salt
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper

The fat

  • cup butter, softened

The liquid

  • 1 cup chicken broth

Instructions

  1. Pat the chicken dry and remove any giblets.
  2. Mix the salt, garlic powder, smoked paprika, black pepper, and cayenne pepper in a bowl.
  3. Divide the seasoning mixture in half.
  4. Combine half of the seasoning with the softened butter.
  5. Loosen the skin from the breast and spread half of the butter mixture under the skin, then spread the remaining butter on top.
  6. Sprinkle the remaining seasoning mixture on the outside of the chicken.
  7. Place a trivet in the Instant Pot and pour in the chicken broth.
  8. Set the chicken breast side up in the Instant Pot.
  9. Set the Instant Pot to Manual - High Pressure for 25 minutes.
  10. Allow for a natural pressure release for about 15 minutes.
  11. Use a crisper lid to air fry for 5 minutes to brown the skin, or broil in the oven until golden brown.
  12. Let the chicken rest for 10 minutes before serving.
