Ingredients

The squash

  • 1 whole Butternut Squash

The coating

  • 2 tsp Olive Oil
  • ½ tsp Fresh Ground Nutmeg
  • cup Fresh Breadcrumbs or Panko
  • ½ cup Grated Parmesan Cheese
  • 1 clove Garlic
  • 1 Tbsp Finely Chopped Parsley
  • ¼ cup Fresh Thyme Leaves
  • to taste Salt
  • to taste Pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Peel the butternut squash and slice it in half lengthwise, discarding the seeds.
  3. Cut the squash into ¼ inch slices.
  4. On a parchment-lined baking tray, pile the squash and drizzle with olive oil and nutmeg, tossing to coat evenly.
  5. Spread the squash in a single layer on the baking tray, using two trays if necessary.
  6. In a food processor, pulse together the breadcrumbs, parmesan, garlic, parsley, thyme, salt, and pepper.
  7. Sprinkle the breadcrumb mixture over the squash.
  8. Bake for 25-30 minutes until the tops are browned and the squash is cooked.
