Instructions
- Preheat the oven to 400°F.
- Peel the butternut squash and slice it in half lengthwise, discarding the seeds.
- Cut the squash into ¼ inch slices.
- On a parchment-lined baking tray, pile the squash and drizzle with olive oil and nutmeg, tossing to coat evenly.
- Spread the squash in a single layer on the baking tray, using two trays if necessary.
- In a food processor, pulse together the breadcrumbs, parmesan, garlic, parsley, thyme, salt, and pepper.
- Sprinkle the breadcrumb mixture over the squash.
- Bake for 25-30 minutes until the tops are browned and the squash is cooked.
