Ingredients

The crust

  • 1 cup all-purpose flour, sifted
  • ½ teaspoon salt
  • cup vegetable shortening
  • 2-4 tablespoons cold water
  • 3 ounces bittersweet chocolate, chopped

The filling

  • 8 tablespoons unsalted butter, cut into pieces
  • 3 tablespoons bourbon
  • ¾ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • cups walnuts, toasted and chopped

Instructions

  1. Preheat the oven to 450°F.
  2. Sift flour and salt into a food processor, add shortening, and pulse until the mixture resembles small peas.
  3. Add cold water gradually until the mixture holds together.
  4. Roll the dough to 1/8-inch thickness and fit into a 9-inch pie plate, trimming the edges.
  5. Prick the bottom and sides of the crust with a fork, then bake until golden brown for 10-12 minutes.
  6. Remove the crust and reduce the oven temperature to 325°F.
  7. Sprinkle chocolate over the hot crust and let it soften for 5 minutes, then spread it evenly.
  8. Melt butter in a saucepan until golden brown, then stir in bourbon and let it cool.
  9. In a bowl, whisk together sugars, cornstarch, and salt, then add eggs, yolk, and vanilla, mixing until smooth.
  10. Whisk in the warm butter mixture and fold in the walnuts.
  11. Pour the filling into the chocolate-lined crust and bake for 35-40 minutes until the center jiggles slightly.
  12. Cool the pie on a wire rack for 4 hours before slicing and serving.
