Instructions
- Preheat the oven to 450°F.
- Sift flour and salt into a food processor, add shortening, and pulse until the mixture resembles small peas.
- Add cold water gradually until the mixture holds together.
- Roll the dough to 1/8-inch thickness and fit into a 9-inch pie plate, trimming the edges.
- Prick the bottom and sides of the crust with a fork, then bake until golden brown for 10-12 minutes.
- Remove the crust and reduce the oven temperature to 325°F.
- Sprinkle chocolate over the hot crust and let it soften for 5 minutes, then spread it evenly.
- Melt butter in a saucepan until golden brown, then stir in bourbon and let it cool.
- In a bowl, whisk together sugars, cornstarch, and salt, then add eggs, yolk, and vanilla, mixing until smooth.
- Whisk in the warm butter mixture and fold in the walnuts.
- Pour the filling into the chocolate-lined crust and bake for 35-40 minutes until the center jiggles slightly.
- Cool the pie on a wire rack for 4 hours before slicing and serving.
