Ingredients

Pie Crust

  • 1 ¼ cup all-purpose flour
  • 2 teaspoons white granulated sugar
  • ¾ teaspoon kosher salt
  • ½ cup unsalted butter, cold
  • cup very cold water

Filling

  • 1 cup packed light or dark brown sugar
  • 6 tablespoons unsalted butter, melted
  • ¾ cup Karo Light Corn Syrup
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon kosher salt
  • 3 cups pecans (whole and halves)
  • 1 cup bittersweet chocolate wafers or chips
  • 1 large egg, beaten (for egg wash)

To Serve

  • to taste whipped cream
  • to taste vanilla ice cream

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt, then incorporating cold butter until crumbly.
  2. Add cold water gradually until the dough comes together, then chill it in the refrigerator.
  3. Roll out the dough and fit it into a 9-inch pie dish, trimming the edges.
  4. Preheat the oven to 350°F (175°C).
  5. In a bowl, whisk together brown sugar, melted butter, corn syrup, eggs, vanilla, and salt.
  6. Add pecans and chocolate to the pie crust, then pour the filling over them.
  7. Brush the edges of the crust with egg wash and bake for 45 to 50 minutes until set.
  8. Allow the pie to cool completely for 2 to 3 hours before slicing.
