Mediterranean-Inspired Nourish Bowl

cooked quinoa (about ⅔ cup dry quinoa)

sliced radishes

orange, red or yellow pepper, diced

cooked or pickled red beets, chopped

slivered almonds

can lentils, drained and rinsed
The dressing

olive oil

juice of one lemon

dried oregano

red wine vinegar

garlic, minced or pressed
Instructions
- Cook quinoa according to package directions and set aside.
- Prepare the lentils by draining and rinsing them.
- Mix all the dressing ingredients together in a large bowl and then add the lentils.
- Stir together and set aside.
- Prep all the vegetables and add them to the bowl with the lentils along with the slivered almonds.
- Once the quinoa has cooled, add it to the bowl and mix everything together.
- Top with sliced avocado and enjoy!
