Mediterranean-Inspired Nourish Bowl

Ingredients

The bowl

  • 2 cups cooked quinoa (about ⅔ cup dry quinoa)
  • ½ cup shredded carrot
  • ½ cup sliced radishes
  • 1 each orange, red or yellow pepper, diced
  • ½ cup cooked or pickled red beets, chopped
  • ½ cup slivered almonds
  • ½ small cucumber, chopped
  • 14 oz can lentils, drained and rinsed

The dressing

  • cup olive oil
  • 1 each juice of one lemon
  • ½ tbsp dried oregano
  • 1 tsp salt
  • ½ tsp ground pepper
  • 1 tbsp red wine vinegar
  • 2 cloves garlic, minced or pressed

Instructions

  1. Cook quinoa according to package directions and set aside.
  2. Prepare the lentils by draining and rinsing them.
  3. Mix all the dressing ingredients together in a large bowl and then add the lentils.
  4. Stir together and set aside.
  5. Prep all the vegetables and add them to the bowl with the lentils along with the slivered almonds.
  6. Once the quinoa has cooled, add it to the bowl and mix everything together.
  7. Top with sliced avocado and enjoy!
