Ingredients

The cupcakes

  • 1 cup unsweetened oat or almond milk
  • ½ cup melted vegan butter
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 2 cups all purpose flour or gluten-free flour
  • ¼ cup vegan sprinkles

Optional Vegan Buttercream Icing

  • 2 cups powdered sugar
  • 4 tablespoons softened vegan butter
  • ½ teaspoon vanilla
  • 1 tablespoon almond milk

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the almond or oat milk, melted vegan butter, sugar, baking powder, baking soda, and vanilla. Mix in the flour until just combined.
  3. Gently fold in the sprinkles and pour the batter into 14-16 cupcake molds.
  4. Bake for 25-30 minutes until the cupcakes are risen and lightly golden.
  5. If desired, prepare the icing by mixing the icing ingredients and frost the cupcakes.
