Broccoli Cheddar Pasta Salad

Ingredients

The salad

  • 8 ounces rotini
  • 1 medium head broccoli
  • 1 ½ cups matchstick carrots
  • 15 ounces great northern beans
  • 4 ounces sharp cheddar
  • ¼ cup toasted sunflower seeds
  • 1 small shallot

The dressing

  • ½ cup tahini
  • ¼ cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • pinch salt
  • 1 to 3 tablespoons water

Instructions

  1. Cook the rotini pasta until al dente, then drain and rinse with cool water.
  2. Chop the broccoli florets into small pieces.
  3. In a small bowl, whisk together the tahini dressing ingredients until smooth.
  4. In a large bowl, toss the cooled pasta with half of the tahini dressing.
  5. Add chopped broccoli, matchstick carrots, white beans, cubed cheddar, sunflower seeds, and diced shallot to the pasta.
  6. Drizzle with the remaining dressing and toss to combine.
  7. Cover and chill in the fridge for at least one hour before serving.
