Broccoli Cheddar Pasta Salad

The dressing

Instructions
- Cook the rotini pasta until al dente, then drain and rinse with cool water.
- Chop the broccoli florets into small pieces.
- In a small bowl, whisk together the tahini dressing ingredients until smooth.
- In a large bowl, toss the cooled pasta with half of the tahini dressing.
- Add chopped broccoli, matchstick carrots, white beans, cubed cheddar, sunflower seeds, and diced shallot to the pasta.
- Drizzle with the remaining dressing and toss to combine.
- Cover and chill in the fridge for at least one hour before serving.
