Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • ½ cup sugar
  • teaspoons baking powder
  • 1 teaspoon salt
  • ¼ teaspoon baking soda

Wet Ingredients

  • 1 large egg
  • cups buttermilk
  • ¼ cup butter
  • 1 teaspoon vanilla extract

Fruits

  • 1 cup blueberries

Additional Sugar

  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 425°F and line a muffin tin.
  2. Mix the flour, ½ cup sugar, baking powder, salt, and baking soda in a bowl.
  3. In another bowl, whisk together the egg, buttermilk, and melted butter.
  4. Create a well in the dry ingredients and pour in the wet mixture, stirring to combine.
  5. Coat the blueberries with the remaining sugar and gently fold them into the batter.
  6. Fill each muffin cup two-thirds full with the batter.
  7. Bake for 20 to 25 minutes until golden and a toothpick comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
