Ingredients

The roast

  • 6 lb bone-in prime rib roast

The herb butter

  • 6 tablespoons butter, softened
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons minced thyme leaves
  • 1 ½ teaspoons minced rosemary leaves
  • to taste salt
  • to taste black pepper

Instructions

  1. Preheat an electric smoker to 250 degrees F and load it with cherry or apple wood.
  2. In a bowl, combine butter, garlic, thyme, rosemary, salt, and pepper.
  3. Rub the herb butter all over the prime rib roast.
  4. Place the roast in a disposable aluminum pan.
  5. Put the roast in the smoker and cook until the desired doneness is reached (around 125 degrees F for medium rare).
  6. Remove the roast from the smoker and cover it with foil, letting it rest for 15 minutes.
  7. After resting, remove the bones and slice the roast into steaks to serve.
