Slow Roasted Prime Rib

The rub

fresh thyme leaves, minced

fresh rosemary leaves, minced

Instructions
- Preheat the oven to 500°F.
- Let the prime rib rest on the counter for 30 minutes.
- Tie the prime rib with twine between each rib.
- Wrap the ends of the bones with foil to prevent burning.
- Mix olive oil, garlic, thyme, rosemary, salt, and pepper to make a rub.
- Generously coat the prime rib with the rub.
- Place a meat thermometer in the center of the roast and place it in a baking dish.
- Cook at 500°F for 15 minutes to brown the exterior.
- Lower the temperature to 325°F and roast until the thermometer reads 5°F below the desired temperature.
- Remove from the oven, cover with foil, and let it rest for 20 minutes.
- Cut off the rib bones and slice the prime rib to serve.
