Ingredients

The roast

  • 6 lb Prime Rib Bone-in roast

The seasoning

  • 1 tablespoon coarse sea salt
  • 1 tablespoon cracked black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons Dijon or brown mustard

Instructions

  1. Pat the prime rib dry with paper towels.
  2. Rub the meat with Dijon mustard or olive oil.
  3. Season the roast with coarse sea salt, cracked black pepper, and minced garlic.
  4. Place the roast in the refrigerator uncovered overnight (or up to 48 hours).
  5. Bring the prime rib to room temperature before roasting (takes 1-2 hours).
  6. Preheat the oven to 475°F.
  7. Place the meat on a roasting pan, fatty side up.
  8. Roast the meat at 475°F for 25 minutes, then reduce the temperature to 300°F.
  9. Continue to cook for 15 minutes per pound of roast, checking the temperature with a meat thermometer.
  10. Remove from the oven when the desired internal temperature is reached and cover with foil.
  11. Let the meat rest for at least 20 minutes before serving.
