Prime Rib Roast

Ingredients

The roast

  • 8 lb Standing rib roast (with 3-4 bones)

The seasoning

  • 1 ½ tbsp Sea salt
  • 1 tsp Black pepper
  • 6 tbsp Unsalted butter (melted)
  • 2 tbsp Italian seasoning
  • 1 head Garlic (minced; about 10-12 cloves or 5-6 tsp minced)

Instructions

  1. If the roast is not tied, tie it tightly with kitchen twine.
  2. Pat the roast dry with paper towels.
  3. Place the prime rib, fatty side up, onto a roasting pan fitted with a roasting rack. Season with sea salt and black pepper, and let it rest for 1 hour to come to room temperature.
  4. Preheat the oven to 450 degrees F (232 degrees C).
  5. In a small bowl, mix together the melted butter, Italian seasoning, and minced garlic. Pour this mixture over the prime rib and spread it evenly.
  6. Roast the prime rib uncovered for 20 to 30 minutes until the garlic is dark golden brown. Tent the top with foil, reduce the oven temperature to 350 degrees F (176 degrees C), and continue roasting until the desired internal temperature is reached.
  7. Remove the prime rib from the oven and let it rest for 20 minutes before carving.
