Instructions
- Let the roast rest at room temperature for 30 minutes before roasting.
- Prepare the roasting pan with onion, halved garlic, thyme, and rosemary.
- Pat the Prime Rib dry with a paper towel.
- Preheat the oven to 225°F.
- Mix together garlic, salt, black pepper, rosemary, thyme, and oregano in a bowl.
- Set aside 1 tablespoon of the mixture and combine the rest with butter to make a paste.
- Rub the garlic herb paste all over the Prime Rib and place it bone side down in the roasting pan.
- Roast uncovered for 3-4 hours, checking the temperature until it reaches 120°F for medium rare.
- Tent the roast with foil and let it rest for 20 minutes.
- Increase the oven temperature to 500°F, remove the foil, and rub the garlic herb butter on the roast.
- Return the roast to the oven uncovered for 15-20 minutes until browned.
- Remove from the oven, let it rest for 20 minutes, then slice and serve.
