Ingredients

The roast

  • 5-7 lb. Bone-in Prime Rib Roast

The seasoning

  • 5 cloves garlic, minced
  • 2 ½ teaspoons truffle salt
  • 2 teaspoons black pepper
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh oregano
  • 1/3 cup unsalted butter, softened

The aromatics

  • 1 large yellow onion
  • 1 head garlic, sliced in half
  • 8 sprigs thyme
  • 2 sprigs rosemary

Instructions

  1. Let the roast rest at room temperature for 30 minutes before roasting.
  2. Prepare the roasting pan with onion, halved garlic, thyme, and rosemary.
  3. Pat the Prime Rib dry with a paper towel.
  4. Preheat the oven to 225°F.
  5. Mix together garlic, salt, black pepper, rosemary, thyme, and oregano in a bowl.
  6. Set aside 1 tablespoon of the mixture and combine the rest with butter to make a paste.
  7. Rub the garlic herb paste all over the Prime Rib and place it bone side down in the roasting pan.
  8. Roast uncovered for 3-4 hours, checking the temperature until it reaches 120°F for medium rare.
  9. Tent the roast with foil and let it rest for 20 minutes.
  10. Increase the oven temperature to 500°F, remove the foil, and rub the garlic herb butter on the roast.
  11. Return the roast to the oven uncovered for 15-20 minutes until browned.
  12. Remove from the oven, let it rest for 20 minutes, then slice and serve.
