Ingredients

  • 12 oz Okra
  • 2 tbsp Olive oil
  • 12 oz Andouille sausage
  • 2 large Bell peppers
  • ½ large Onion
  • ½ cup Celery
  • 4 cloves Garlic
  • 8 cups Chicken broth
  • 1 14.5-oz can Diced tomatoes
  • 2 tbsp Cajun seasoning
  • ½ tsp Sea salt
  • 24 oz Cauliflower rice
  • 12 oz Medium shrimp
  • 1-3 tsp File powder

Instructions

  1. Cook the okra in a small skillet until no longer slimy.
  2. Heat oil in a large dutch oven and sauté bell peppers, onions, and celery until soft.
  3. Add sliced sausage and cook until browned.
  4. Make a well in the center and add minced garlic, letting it sizzle.
  5. Add chicken broth, diced tomatoes, sautéed okra, Cajun seasoning, and salt, then bring to a boil and simmer.
  6. Add shrimp and simmer for a few minutes, then add cauliflower rice and simmer until cooked.
  7. Remove from heat and sprinkle with file powder to thicken.
