Ingredients

The macaroons

  • 3 cups shredded unsweetened coconut
  • ¼ tsp vanilla extract
  • 2 Tbsp maple syrup
  • ½ Tbsp melted coconut oil

The chocolate dip

  • ½ cup dairy-free dark chocolate (chopped)

Instructions

  1. 1. Preheat the oven to 350°F (176°C) and grease a baking sheet.
  2. 2. Blend the shredded coconut in a food processor until it resembles a dough.
  3. 3. Mix in the maple syrup and vanilla extract until just combined.
  4. 4. Scoop the mixture into half-circle shapes and place them on the baking sheet.
  5. 5. Brush the tops with melted coconut oil and sprinkle with coconut crumbs.
  6. 6. Bake for 8-10 minutes until the edges are golden brown.
  7. 7. Let the macaroons cool while melting the chocolate over a double boiler or in the microwave.
  8. 8. Dip the cooled macaroons in the melted chocolate and place them on parchment paper to set.
  9. 9. Once set, transfer to a serving platter.
