Vegan Dark Chocolate Macaroons

The chocolate dip

dairy-free dark chocolate (chopped)
Instructions
- 1. Preheat the oven to 350°F (176°C) and grease a baking sheet.
- 2. Blend the shredded coconut in a food processor until it resembles a dough.
- 3. Mix in the maple syrup and vanilla extract until just combined.
- 4. Scoop the mixture into half-circle shapes and place them on the baking sheet.
- 5. Brush the tops with melted coconut oil and sprinkle with coconut crumbs.
- 6. Bake for 8-10 minutes until the edges are golden brown.
- 7. Let the macaroons cool while melting the chocolate over a double boiler or in the microwave.
- 8. Dip the cooled macaroons in the melted chocolate and place them on parchment paper to set.
- 9. Once set, transfer to a serving platter.
