Ingredients

The macaroons

  • 3 cups unsweetened shredded coconut
  • 1 tsp ground turmeric
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • 1 pinch black pepper (optional)
  • 1 pinch ground cardamom (optional)
  • 3 Tbsp maple syrup
  • 1 heaping Tbsp coconut oil (scoopable, not melted)
  • ¼ tsp pure vanilla extract
  • 1 pinch sea salt

The chocolate shell

  • ¾ cup chopped vegan dark chocolate
  • 1 Tbsp coconut oil

Instructions

  1. Line a baking sheet with parchment paper.
  2. Blend shredded coconut, turmeric, cinnamon, ginger, black pepper, and cardamom in a food processor until a paste forms.
  3. Add maple syrup, coconut oil, vanilla, and sea salt, then mix until well incorporated.
  4. Scoop out tablespoon amounts, pack them firmly, and shape into small discs.
  5. Place the macaroons on the parchment-lined baking sheet and chill in the refrigerator or freezer.
  6. Melt chocolate and coconut oil over a double boiler or in the microwave.
  7. Drizzle melted chocolate over each macaroon and let set in the refrigerator.
  8. Dip each macaroon in remaining melted chocolate, then set on parchment paper to harden.
